Dopiazza means double onion and the wonderful texture of this curry is in part down to the el dente strips of roasted onion, making it a winner!

A spicy curry, traditionally eaten with naan bread.
Cook with: Chicken or Lamb
Ingredients: 150gr Dopiazza curry sauce 160gr cubed chicken breast per person or 160gr of pre-cooked cubed lamb ½ tsp ground coriander pinch cumin powder pinch turmeric pinch chilli powder 2 pieces star anise ¼ large spanish onion (thinly sliced) ¼ large spanish onion rings (deep fried until crisp) stock as required
Garnish: Dessertspoon chopped fresh coriander
Method: Stir-fry ¼ large spanish onion slices until golden brown, add spices to wok and stir fry for 1 minute. Add cubed chicken breast, and gently stir fry for a further 1-2 minutes. Do not allow to stick or it will burn, add a little stock if necessary. Add the sauce and simmer until chicken is cooked.
Turn into balti dish and garnish with chopped fresh coriander and deep fried onion rings.
Alternatives: For lamb dopiaza substitute pre-cooked lamb for chicken. When adding the lamb stir fry for 2-3 minutes and proceed by adding the sauce and simmering until hot. Turn into a balti dish and garnish as above.
